What Does a Traditional Caesar Salad Have in It?

A classic Caesar salad starts with crisp romaine lettuce, crunchy homemade croutons toasted from good bread, and a generous handful of shaved or grated Parmesan. The real magic is in the signature dressing. It’s bold, garlicky, and full of umami.

Traditionally, Caesar dressing calls for anchovies, fresh garlic, lemon juice, Dijon mustard, Worcestershire sauce, olive oil, and black pepper. Back in the 1920s (as well as some recipes today) when Caesar Cardini invented it, a raw egg yolk helped emulsify everything into that thick, creamy texture we all love.

But here’s the thing: I know a lot of folks aren’t keen on cracking open a raw egg for dressing. Whether it’s the food safety worry or just not wanting to mess with it, I get it.

That’s why I’ve spent quite a bit of time working on perfecting the best homemade Caesar dressing without raw eggs. After testing many batches, I landed on a simple version that uses mayonnaise as the creamy base. It delivers that same rich, tangy, garlicky flavor you expect from a classic Caesar. But it’s quicker, easier, and completely fool-proof.

Shrimp Caesar salad ingredients laid out with romaine, shrimp, parmesan, and Caesar dressing components

Mayonnaise- This is the creamy base of the Caesar dressing. Full-fat mayonnaise gives the best flavor and texture, but use your favorite brand. Just be sure that it’s one you enjoy the taste of on its own.

Garlic- Fresh garlic is key here. Grating or pressing it helps the garlic to melt smoothly into the dressing, so you get plenty of flavor without big raw chunks.

Lemons- Freshly squeezed lemon juice, as well as the zest, brightens the dressing up. The juice also adds a fresh flavor when finishing the shrimp off. Fresh juice is best, but bottled juice can be used in a pinch.

Anchovy Paste- This is what gives Caesar its signature, savory flavor. Don’t worry, it won’t taste fishy. It simply adds a rich umami flavor. If you’re unsure about the anchovy paste, start with half the amount and taste it. Add the rest if you’re in favor of it!

Parmesan Cheese- Freshly grated (very fine) parmesan blends into the dressing much better than pre-shredded cheese. You’ll also need more shaved Parmesan to add to the salad. However, you can use grated Parmesan instead if you prefer. The shaved Parmesan just gives the salad a more traditional feel.

Sea Salt- Start light with the recommended ¼ teaspoon, adjusting as needed. The parmesan, anchovy paste, and Worcestershire already bring quite a bit of saltiness.

Black Pepper- Freshly ground black pepper adds gentle heat and classic Caesar flavor. Adjust to taste.

Shrimp- This adds bold, classic seafood flavor to the shrimp and pairs wonderfully with the lemon and Caesar dressing.

Oil- Any light, neutral oil works well to coat the shrimp and cook themin. I prefer extra virgin olive oil, but avocado oil would be great too.

Old Bay Seasoning- This adds bold, classic seafood flavor to the shrimp and pairs wonderfully with the lemon and Caesar dressing.

Lettuce- Crisp romaine is essential for a good Caesar salad. Chop it into bite-sized pieces, and be sure it’s well washed and dried. If it is not dried thoroughly, the dressing won’t stick to the lettuce.

Croutons- Croutons add crunch and soak up a little of the dressing. Use store-bought or make your own. Either works as long as they’re sturdy and flavorful.

Substitutions

  • Mayonnaise: You can substitute Greek yogurt for half or all the mayonnaise for a lighter dressing, though the flavor will be slightly tangier.
  • Parmesan Cheese: Freshly grated Parmesan is best, but Pecorino Romano works well for a sharper, saltier flavor.
  • Old Bay Seasoning: Cajun seasoning, blackened seasoning, or a simple blend of garlic powder, paprika, salt, and pepper all work nicely

Tools & Equipment

  • Small mixing bowl- To combine all the dressing ingredients.
  • Grater/zester- Used for grating garlic and lemon zest.
  • Whisk- Works best to blend the dressing.
  • Measuring cups and spoons- To accurately measure mayonnaise, lemon juice, and seasonings.
  • Large skillet or sauté pan- Needed for cooking the shrimp.
  • Tongs- Used to turn the shrimp while cooking.
  • Medium Mixing Bowl- Needed to toss the shrimp with olive oil, lemon juice, and Old Bay seasoning.
  • Large salad bowl- To combine lettuce, shrimp, croutons, and dressing.
  • Knife and Cutting Board- To chop romaine lettuce and preparegarnishes.
  • Cheese Grater and Vegetable Peeler- To shave Parmesan cheese.
  • Lemon juicer- Needed if you prefer easier extraction of fresh lemon juice.

6 Pro Tips on Shopping for Shrimp

1. Buy frozen (yes, really)
Shrimp located at the seafood counter was previously frozen anyway, and you’ll find that the price is generally higher. Buying frozen gives you better quality and lets you thaw only what you need.

2. Look for peeled and deveined
Save yourself time—“EZ peel” or fully peeled/deveined shrimp are perfect for quick recipes like this.

3. Go for large or jumbo shrimp
For shrimp Caesar salad, large (31–40 count) or jumbo (16–20 count) shrimp give the best texture and presentation.

4. Check the ingredient list
Look for shrimp with minimal additives. Avoid ones with lots of sodium or preservatives when possible.

5. Wild-caught vs. farm-raised
Wild-caught shrimp tend to have better flavor, but responsibly sourced farm-raised can also be a great option. Personally, I prefer wild caught.

6. Thaw properly
Thaw overnight in the fridge or run under cold water for a quick thaw—never use warm water.

Storage Instructions

Store shrimp Caesar salad in an airtight container in the refrigerator for up to 2 days, ideally keeping the shrimp, lettuce, dressing, and croutons separate.

If the salad is already dressed, note that the lettuce will soften and the shrimp may lose some texture, but it will still be safe to eat within the 2-day window.

Can I use tails-off shrimp?

Yes! Tails-on shrimp look nice for presentation, but tails-off shrimp can be more convenient to eat. Cooking wise, there is no difference. Use whichever you prefer.

Can I make Shrimp Caesar Salad ahead of time?

Yes, you can. Prepare the dressing up to 3 days in advance.
For the shrimp, prepare it one day before. Cool and store in an airtight container in the fridge. When ready to serve, you can reheat them or toss them into the salad cold.
Add the croutons and parmesan in, just before serving.

Can I add other toppings?

Sure! Cherry tomatoes, avocado, or crispy fried bacon would be great additions.

  • Dressing Consistency: For a thinner Caesar dressing, whisk in an additional 1-2 tablespoons of lemon juice or add a splash of olive oil until the desired consistency is reached.
  • Shrimp Size: Medium shrimp cook quickly and evenly. Avoid overcooking, as shrimp can become rubbery in just a minute.
